“Snowboarding inspired me to dream and explore. It gave me a sense of freedom and taught me about respect and responsibilities. It helped me push myself creatively and physically. It also allowed for me to meet new people and make new friends.  Snowboarding taught me about setting goals and persevering. It taught me about competition, winning and losing but most importantly about having fun.

If I can help open up the door for young people to experience something that can positively change their lives, through something like snowboarding, being outdoors, being in nature, it’s the best of all worlds. With the restaurant, we like planting seeds and watching them grow into something bigger. This is an important seed to plant.”

ASKA RESTAURANT

Chef Fredrik Berselius brings his love of nature to his urban surroundings through food at Aska, Brooklyn’s only two Michelin-starred restaurant.

With an emphasis on ingredients from the surrounding Northeastern U.S. region and influenced by his Scandinavian homeland, he masters balancing the ambitious with the approachable, offering a menu of extraordinary dishes that bring guests on a journey of both new and familiar flavors. It is his intention to create food that is not only delicious but engages you in an experience worth remembering.

Ever evolving, Berselius’ menus are a culinary journey of flavors and techniques designed to awaken the senses and be in tune with the seasons. Each course is a process of discovery, encouraging diners to experience flavors that connect them to their surroundings or transport them to another time and place.

Aska works with nature’s rhythm to search for flavors and capture moments in the year. Ingredients are sourced thoughtfully with direct links to the growers and producers, many from the surrounding New York region.

Originally from Stockholm, Sweden, Fredrik Berselius has spent most of his culinary career in New York City. Inspired by a childhood spent experiencing the changing seasons, Berselius has dedicated his career to communicating his love for nature through food. Transforming locally-sourced and foraged seasonal ingredients, the 14-course menu served from Aska’s open kitchen takes diners on a journey through the flavors of the Northeastern United States as seen through a Scandinavian lens.

Aska, Swedish for “ashes,” was open in its original location from 2012 to 2014 and within less than a year earned its first Michelin star and a spot on Bon Appétit’s 10 Best New Restaurants in America list. In the summer of 2016, Aska reopened in a new bilevel space in a restored 1860s warehouse building near the edge of the Williamsburg Bridge. In its new home with an open kitchen, a garden, and a cellar lounge, Aska soon received a three-star New York Times review by Pete Wells and earned its second Michelin star as one of only ten restaurants in New York City to hold the honor at the time.

Chef Fredrik Berselius and Aska have collaborated with companies and brands across industries and fields for events, consulting, guest chef appearances, and more. These include judging on Master Chef Greece and Hell’s Kitchen Italy, as well as live appearances on Swedish Morning TV and radio. Berselius has also participated in gastronomy events around the world, including the United Kingdom, Sweden, Norway, Denmark, Iceland, Mexico, Japan, Poland, Netherlands, Greece, and Germany. Aska’s Past clients include Audi, BMW, Capital One, Chase, Carl Hansen & Son, Nike, Bang & Olufsen, Volvo, Gaggenau, Kvadrat, Auberge Resorts, Brilliant Minds, and more. Most recently, Chef Berselius and Aska operated a month-long pop-up in Tivoli Gardens in Copenhagen and cooked four-hand dinners at two Michelin-starred Ocean and Restaurant Julemont, and at 3 Michelin-starred Jordnær in Copenhagen and Rutz in Berlin.

Wythe Hotel is Williamsburg’s original boutique hotel focused on community, food, culture, and
warm, genuine service.

As the first hotel built in and for Williamsburg, Wythe Hotel simultaneously embraces the
neighborhood’s industrial roots and its well-established creative spirit. The property preserves
the historic elements of the original factory building (built in 1901) with exposed wooden beams
and cast-iron columns, while infusing modern character through curated artwork and
floor-to-ceiling windows with unfettered views of the cityscape and Manhattan skyline.

Upon its opening in 2012, Wythe Hotel pioneered a wave of design-forward destinations in
Williamsburg and marked a transition for the neighborhood, being the first hotel built in and for
Williamsburg. The hotel boasts 69 spacious guest rooms with luxurious touches, including
custom-made reclaimed timber beds, heated concrete floors and vintage fixtures. The property
has earned numerous accolades from outlets like Conde Nast Traveler, Travel + Leisure, and
Wallpaper,* including a coveted MICHELIN Key from MICHELIN Guide.
